Turkey Scramble


Turkey Scramble

1 lb Ground Turkey
1 Cup Chopped Carrots
½ Cup Chopped Celery
½ Cup Chopped Onion
1 Cup Chopped Button Mushrooms
1 Cup Cherry Tomatoes
1 Tbs Fresh Chopped Basil
1 Tsp Sea Salt
2 Tsp Marjoram
½ Tsp Pepper
1 Tsp Cumin
1Tsp Paprika
1 Tsp Ghee or Coconut Oil

Rinse and chop veggies. Heat skillet to medium high and add ghee or coconut oil. Add veggies to the skillet and allow them to soften slightly. Once the veggies begin to cook, add the turkey and seasonings and continue to cook until the flavors develop and the turkey is no longer pink.

This dish is great with greens and eggs if you want to mix it up. I usually use whatever I have in the fridge for veggies that needs to be cooked. Also yummy with over-easy eggs and a smidge of raw cheese on top.
